I haven’t tried that many steak house bread variety but I’ve only been shocked by seafood Resteraunt breadsticks

253

u/wawawahewawahe Oct 18 '21

I worked at a Texas Roadhouse right across the street from a Red Lobster and we used to trade bread all the time. How I'm not 350 lbs. is beyond me.

105

u/wiiya Oct 18 '21

JUST RELEASE THE RECIPES.

I NEED TEXAS ROADHOUSE RANCH.

I NEED TEXAS ROADHOUSE SAUTÉED MUSHROOMS.

I NEED CHEDDAR BAY BISCUITS.

You’re all here on Reddit. Leak it! You’re not paid enough not to.

44

u/nightdrive82 Oct 18 '21

Cheddar Bay Biscuits are easy, my ex made me some and she can't cook for crap!

22

u/wiiya Oct 18 '21

Cool thanks. I’ve made some too, and they’re fine. Not the same, but fine. I want the source code.

26

u/nightdrive82 Oct 18 '21

Their branded mix is also available.

11

u/wiiya Oct 18 '21

It’s not the same.

But thank you.

14

u/nightdrive82 Oct 18 '21

Oh weird, reviews say they're indistinguishable!

"But how does it taste? It's the real deal. Flavor-wise, the two were completely indistinguishable, right down to the little flakes of parsley on top. If anything, the mix came out better than the ones you get at Red Lobster."

Maybe it's in the preparation?!

6

u/wiiya Oct 18 '21

I’ll be honest, the biscuits were the last of my list for a reason. I just want that RANCH RECIPE.

3

u/Youre10PlyBud Oct 18 '21

I found an old thread where an employee commented the supposed recipe. They use a special food service ranch mix that seems to be only in pretty large bulk quantity. No idea if this is a legit recipe, but... It's what the dude commented and he even had item numbers, so Id probably say that's it.

fresh herbs and buttermilk and sour cream. or even a ranch packet and buttermilk and sour cream. 99 times out of 100 it's why restaurant ranch tastes leagues beyond the bottled stuff.

5

u/PatternrettaP Oct 18 '21

Up the butter and salt a little bit from the official recipe or whatever recreation you are using.

I experimented with trying to make what I felt was perfect recreation once and that was more or less what it needed to put it over the edge.

If the biscuits aren't fluffy enough, try chilling the butter first before you work it into the dough and working quickly.

If the tops aren't crispy and browned enough, raise the heat near the end and baste them with melted garlic herb butter.

If they just aren't rich enough or garlicky enough, add more butter and garlic until they are.

Having worked two years at a red lobster (it sucked), I can say with almost 100% certainty that what you're missing is the scampi butter spread on top of the biscuits after baking. It gives them that tangy, rich, jesus-christ-I-just-ate-3-baskets flavor. Try that out next time and let me know, the biscuits really aren't anything special without the scampi butter.

u/Rahmulous Oct 18 '21

They sell red lobster brand cheddar bay biscuits at a lot of stores, including Costco. But also you can find tons of recipes for them online. Also they’re so damn bad for you but so good.

15

u/wiiya Oct 18 '21

Thank you for your insight. I know it’s unhealthy. The CostCo biscuits are not quite the same.

If it requires a mountain of salt or butter or fat, I don’t care. Just tell me how to do it.

To be honest, I just want that Texas Roadhouse Ranch. I realize it’s some unholy combination of Sour Cream, Buttermilk and a bunch of spices, but just give it to me.

23

u/brewmeisterpanda Oct 18 '21 Gold

1 cup mayo

1/2 cup buttermilk

1.5 tbsp garlic powder to taste

1/4 tbsp cayenne pepper to taste

1 tbsp cracked pepper to taste

1 tbsp lemon juice

1 clove of minced garlic

Whisk together, refrigerate for at least 30 minutes before using, preferably longer though.

You can add some sour cream as well, but it makes it thinner, and I like mine thick. And most of the time I add some MSG (Accent or the like) because MSG makes everything better.

11

u/wiiya Oct 18 '21

I’m literally going to try every recipe I see here.

Thank you.

5

u/Used-Fruits Oct 18 '21

I now pronounce y'all are married forever.

12

u/Rahmulous Oct 18 '21 Gold

This recipe for cheddar bay biscuits looks excellent and is higher in calories than the boxed mix so you know it’s better.

I haven’t ever tried to make Texas Roadhouse ranch, but this recipe looks like the right mix of ingredients that I would assume it would be.

7

u/wiiya Oct 18 '21

I will try that ranch recipe this week, thank you!

They made me sign a NDA when I worked at Roadhouse lol I don't know how they'd enforce it but it was still pretty funny to me

9

u/wiiya Oct 18 '21

I’m sure they have you on lockdown as /u/PerpetuallyMoistSock. Nobody cares what happens on Reddit. You can do it. Just do it.

7

u/PerpetuallyMoistSock Oct 18 '21

I know they can't do anything to people on reddit lol but I forgot a lot of the recipes I just really remember the bread and butter recipe cause it's super simple and I was the baker for a while. Just flour, sugar, yeast a tiny bit of salt and water at exactly 100 degrees. And the butters just margarine, honey and cinnamon powder and blend it in a stand mixer for like 15 minutes

5

u/wiiya Oct 18 '21

I appreciate your help. The bread and butter is great.

3

u/PerpetuallyMoistSock Oct 18 '21

Got you. Sorry I don't have the exact ratios, we'd make the bread 50 pounds at a time so I don't know how scale it down to household measurements

2

u/wiiya Oct 18 '21

I understand. Baking is an art form even at mass production levels.

But I bet if I had a chance to taste /u/PerpetuallyMoistSock’s bread, I’d like it.

Thanks again!

When I die, I want my body stuffed with Red Lobster Cheddar Bay Biscuits

13

u/Kronusx12 Oct 18 '21

I worked there as a bartender through college, coming in on a Sunday morning to get some of those while hungover was clutch. After 9 years of working there the only time I wanted them was when hungover. But I’d throw one in a bowl with a little marinara and shredded cheese on top and it was so good for calming the stomach.

5

u/ChefArtorias Oct 18 '21

Only actual good thing in that restaurant.

-4

u/jicty Oct 18 '21

It's a chain steak house one step above Applebee's.

24

u/enddream Oct 18 '21

It is so, so much better than Applebee’s.

6

u/pistoncivic Oct 18 '21

I don't go to Applebee's for the food. I go for the local neighborhood ambiance.

2

-2

u/jicty Oct 18 '21

I just hate Texas road house because all the peanut shell on the floor seems dirty to me. I can't even remember what the food tastes like the peanut shell on the floor made me never want to go back.

10

u/enddream Oct 18 '21

They don’t really do that anymore. At least at the ones near me.

4

u/steveosek Oct 18 '21

None of them do it anymore.

1

u/jicty Oct 18 '21

Well it's been like a decade since I was there last but It still just stuck in my head how dirty that place felt for a large chain restaurant and I just have zero desire to ever go back even if they did change since I have better local restaurants near me anyway even if the local places cost a little more.

4

u/MrPochinko Oct 18 '21

To be fair, the franchise as a whole is a very tight run ship. There are pretty insane requirements to get a franchise, so the franchise owners tend to be more serious about stuff. And most everything is made or cut in house. Only thing they get pre cut is the fish. They cut their own steaks and everything. Pretty legit place. I figured they were more like and Applebee's or Chili's, but after realizing that for about the same price they do everything so much better, it was a bit mind blowing.

Well that about the lats time I was there and still have zero desire to go back because the steak wasn't anywhere near good enough to make me forget about how dirty that place felt. Local steak houses are almost always better anyway.

11

u/Darkstar_98 Oct 18 '21

That cinnamon sugar butter? Super easy to make if you have a blender, but if you’ve got a whisk/fork and some determination you can have it as well.

1 stick salted butter, at room temperature 1/4 cup powdered sugar 1.5 Tablespoons honey 3/4 teaspoon cinnamon (If using unsalted butter, 1/4 tsp salt)

Blend/whisk til creamy and you’ve got heaven at home.

5

u/dayvidgallagher Oct 18 '21

The rolls are also nine percent sugar by weight if anyone doesn’t see this recipe and wonder why this shit is so good

A friend used to work there and he said a basket plus butter was pushing 2000 calories

3

u/PerpetuallyMoistSock Oct 18 '21

The sugar isn't too bad. If I remember it was a cup of sugar for 48? pounds of flour. So not too bad for the amount of bread it makes

2

u/dayvidgallagher Oct 18 '21 edited Oct 18 '21

I was just going off this that says 3g for a 31g roll

Also that when seriously overweight people came in that it was a joke that they would typically order for their two sides “double mash pot loaded”

2

u/PerpetuallyMoistSock Oct 18 '21

Oh there were some funny orders from some of the more "portly" customers. I still remember this ticket I got for a filet salad, extra cheese, extra egg, add buffalo sauce with cheese fries ON TOP of the salad. And guess what dressing? Low fat ranch. Lol

2

u/Soul_Like_A_Modem Oct 18 '21

Some people are so obsessed with bashing the US that they will regurgitate shit like he did, gratuitiously and without any real reason other than to satisfy an itch.

I bet that person has never actually been to an American grocery store, or had any American bread. But the fact that American bread is BAD and AMERICA BAD, in general, is very important to him.

3

u/Penakoto Oct 18 '21

Maybe if they ate tastier food, they'd regurgitate less.

2

u/ggtsu_00 Oct 18 '21 edited Oct 18 '21

It's not without reason. The vast majority of "American" breads you find in US stores is pretty bad. It's a heavily process junk food loaded with sugar and most of the same ingredients you'd find in Twinkies.

There's plenty of American things to be proud of (I'm a US citizen, mind you), but bread surely is not one of them.

→ More replies

2

u/Reead Oct 18 '21

Not sure if you realize this, but virtually every single American grocery store makes real bread in-house, and most people prefer it. Typical "white bread" is usually used for super basic lunch sandwiches or comfort foods like grilled cheese.

I'd tell you to stop believing everything you read on reddit about the US, but perpetuating those stereotypes appears to be one of your favorite pastimes, so... you do you.

3

4

Bread is cheap so it's better to fill you up with bread and save on more expensive mains and sides.

That said, I fuck with Texas Roadhouse bread. Could die happy choking on 50 pounds of it.

3

u/sgj5788 Oct 18 '21

Makes perfect sense. After about 5 of these at Texas Roadhouse I’m ready to go home

3

u/therealreal95 Oct 18 '21

Outback who the fuck is your baker ?? Bread is delicious

3

u/Veiovis99 Oct 18 '21

Reading the comments I somehow feel like none of y'all have been in a proper bakery before. Like the type of bakery you walk in and there is an entire shelf filled with all sorts of delicious breads. I had a conversation with a friend last week who was considering driving an hour to a bakery because their bread was so good. To some of you Americans out there an hour drive might not be that much, but I would consider a 10 min drive to a bakery long since there are about 5 closer to me than that.

16

u/TheModeratorWrangler Oct 18 '21

The more bread you eat, the more you fill up before the meal. Means you’ll order the expensive steak for even showing up to the steakhouse, and more likely to fuck off sooner for the table to be prepared for the next guest.

This is why I grill at home.

7

u/greg19735 Oct 18 '21

While you do want to turn over tables quickly, filling them up on free food isn't a good business plan. Deserts bring in good money and ofc alcohol is a big money maker.

7

u/TheModeratorWrangler Oct 18 '21

If you’re at a steakhouse odds are you’re gonna be falling over at the bar tab.

2

u/greg19735 Oct 18 '21

What do you mean?

Also, do the high end steak houses even have free bread?

2

u/Kronusx12 Oct 18 '21

I think every nice steakhouse I’ve been to has served some variety of bread, whether it was fresh loaves, rolls, onion rolls, or pretzel bread. Some alternatives I’ve seen from places with more supper club / speakeasy vibes serve a relish plate before the meal.

I've never been to a steakhouse because I can't eat beef :(

4

u/bankrobba Oct 18 '21

You're allowed to order seafood, chicken, and vegetarian.

2

u/AGoatInAJar https://www.youtube.com/watch/dQw4w9WgXcQ Oct 18 '21

I know but then there’s not as much purpose going to a steakhouse according to my parents

2

u/Haz_y Oct 18 '21

OMG!!!

2

u/EUCopyrightComittee Oct 18 '21

No I think you mean good Jeff

2

u/JasmineTulip Oct 18 '21

If you've never been to Mastro's (because of the price), go there at least for the bread. Bread basket comes with 3-4 kinds of different bread, all delicious. Same with Il Fornaio but their quality has dropped, the bread basket is still good.

This post has to be an ad. Too many people talking good about shitty restaurants.

2

u/sgj5788 Oct 18 '21

2

u/piplax03 Oct 18 '21

As an employee of Texas Roadhouse, I can tell you first hand people are ravenous for that shit

2

u/sandeybeech78 Oct 18 '21

Went to Gwen in Hollywood where they have their own dry age room for all their steaks. Best part of the meal was the free bread. You don't have to spend a lot of money for good tasting food.

2

u/alldaycray Oct 18 '21

Steakhouses do serve some pretty good bread.

2

u/DabbleOnward Oct 18 '21

As a an old steakhouse worker that used to make its own bread from scratch I can say...WHEN... it was made correctly it was freaking awesome! People used to rave about the ranch lol. I saw the recipe one day and died laughing... hidden valley packet and buttermilk ...

2

u/StylishWoodpecker Oct 18 '21

You eat at a restaurant different than you eat at home, you know? Like, at home you would never cook up a pork chop on your skillet, you know, and make it nice and hot on one side, then turn it over, make it hot on the other side, and then cut into it and see how it’s going in the middle. And then you go, Man, I’m going to love eating this delicious pork chop. As soon as it’s hot enough to eat, I’ll eat it. But while I’m waiting, I’m going to eat a big loaf of bread. Who would do that? With, like, 35 pats of butter, and I’ll eat that loaf of bread. And that will get my appetite sharpened up… for the pork.

2

u/waikiki_sneaky Oct 18 '21

Canadians, i see you thinking of The Keg

2

u/Manacow Oct 18 '21

Pretty sure it's so you fill up on bread and don't order as much steak because it's expensive. I could be wrong though

2

u/sgj5788 Oct 18 '21

You’re like the 5th person in here who said that. Starting to wonder if I’ve been tricked or did I save money?

2

u/Gabornie Oct 18 '21

This is just a worse version of a reposted meme

1

u/frazzled_confusion Oct 18 '21

But the steak is always disgusting and dry.

2

u/sgj5788 Oct 18 '21

That’s why you only go for the bread

2

u/jicty Oct 18 '21

You are going to the wrong steak houses my friend.
