Depends on region. Here in Georgia, USA we say Kay-Yo-Tee. A few Arizonans I know say Ka-Yot

My Arizonan grandma says Ka-Yot but she only does it because she thinks that's how we say it in Texas. I personally say it Ka-Yo-Tee.

From the Aztec "Coyotl."

The Spanish couldn't pronounce that "tl" ending that so many Mexican words have, so they changed it to "coyote."

In proper Spanish, you would pronounce the "e." But I guess it's up to you which version sounds more like the original.
